@vinosity @Photos_in_Chile @CourtyardDairy You need to find the right cultures and make cheese without fear. If you make a mistake, you may have invented a delicious new cheese (or at worst a mess to clean up)

@Photos_in_Chile @CourtyardDairy I already make an imitation Mozarella, that is quite passable. Now I am going to be here on a longer-term basis, I am thinking about making more complex kind of cheese (thanks to inspiration from @MandelAaron )

Whinging about hotel prices, aside... The thing I am most looking forward to, on my return to the UK, is cheese. (oh, and also to see my friends; but mostly, cheese) The cheese in Bolivia is very ordinary. @CourtyardDairy you will be savory saviour.

@artisanswiss Other than possibly assisting in the breakdown of the cheese by holding the b linens closer to the cheese, it didn't appear so. Mostly, it serves as a way to keep the cheese together once it breaks down: It's very soft

I had to visit the cheese cathedral, Neal's Yard. Sadly the producer of Edmund Tew was flooded, so none is available for a few weeks. But I obtained a St Cera (washed rind cows milk) and a St Tola (goats milk).
