Another great pan is carbon steel- non-stick & heat retention of cast iron with the light weight & cooking speed of stainless. About 1/2 the weight!💪
Needs TLC like cast iron for rust. Pricier, but not $$$.
Brands: DeBuyer, Matfer, or the new kid- Made In.

Ever since I learned to love cast iron, I haven't even thought about nonstick pans. Sure, there's a bit of a learning curve, but the beauty of cast iron is that it's impossible for you to ruin it. Experiment with scrapers. Experiment with seasonings. The pan will outlive you.
