Things people that support rebuilding local and regional food don’t want to hear…… There were more pigs farrowed outside when there was still a competitive commodity market pre 1990’s than are today for niche markets. Pictures from an auction I attended Monday.

This is not normal - the increase in ticks visibly on us already is alarming. We have grasses kept low between mowing and grazing animals, wood are being cleared by mulching now - chickens are free ranging around the house and through the fields and still the ticks are showing. Yes - we live where there are ticks and they are normal - but this is more pressure than I’ve seen before.

We used the chicken carcass to make stock, and tonight the stock and leftover chicken are being used to make jambalaya. Flavored with Cajun Heat, of course. Reminder that jambalaya is one of the recipes in our 100% free recipe book available for download in the online store.

Tonight we cooked a whole farm to table chicken bought from Cottage Pastures (@Mathew_Winters1). Spatchcocked the bird, rubbed with ghee, and then dusted with our Cajun Heat seasoning. Cooked in the Green Egg at 375-400 until done. How did you ENAK today?
