actually - if you want crispyness do NOT add salt before cooking as it will soften the roast spuds; I wouldnt add herbs either as at temp you need for roasting ( 200 ish, 425 F ) they'll burn , ditto garlic instead add after or in last 15 mins. And you dont need a LOT of oil . Aside from that .....
