To all our new Japanese friends.. BBQ is more than just cooking big portions and eating. It’s an experience, a lifestyle. The early mornings, late nights, fires that won’t stay lit or some that stay too hot. Being outside, family, friends, kids running around getting into trouble in the backyard with the dogs. It’s all part of it, and what many of us consider true BBQ. And when the smoke settles and the tables are set we enjoy our time together. Remembering that this is it, our only chance to live the lives we want to live, together. It is true freedom. 🇺🇸🤝🇯🇵

One of my favorite moments in Japan was when I rented a kimono in Kyoto. We were waiting for a train, the doors to another opened, and there was a couple standing there. The man had a big camera around his neck, but wasn’t paying attention. His girlfriend starts whacking him. He looks up, stunned and SNAP! Got his picture seconds before the door closed.

I was thirty-eight when I pulled that little girl from a burning car on my way home from work. Her parents didn’t make it, and she clung to me like she had no one else. Everyone told me to step back, but she reached for me every time I returned. With no relatives found, I signed the papers and took her home. She became Avery—strong, disciplined, determined. Twenty-five years later, wearing her new badge, she whispered, “Dad… now let me protect you.”

Alright Japan… 🇯🇵🤝🇺🇸 You’ve been putting on a masterclass—clean technique, precision, respect for the craft. Nothing but respect. So here’s a little return from the U.S. kitchen… Black rice bowl built with crispy tofu, medium egg, pickled radish, fire-kissed veg, and layers of heat, acid, and umami coming together like they’re supposed to. No shortcuts. No noise. Just balance and culture-honoring execution. Different styles… same mindset. Char, maillarding, and precise timing. Respect always. But tonight... we’re talking back a little 😏🔥👊 P.s. got a new bowl from the Asian Market just for this picture.😂😂👊 @hmcrem @Gaijin_Markus @Supersonic_Red @CarolynHen55369 @Elil2002 @goodbreffis @TapRootsFood @DadsSeasonings @ReconJackUSMC

That massive roof you’re seeing isn’t just for decoration or to finish extra wood. Think about it like this: our sun in Nigeria doesn’t play fair. It beats down hot all day, turning the house into an oven. A high roof creates that big empty space above your ceiling where the hottest air rises and stays trapped up there, far away from where you’re sitting, eating, or sleeping. The cooler air stays lower, so the whole house feels more breathable and less like a microwave. Then comes the rain. When the heavens open (and we know how heavy it pours), that steep slope lets the water run off fast and clean. No pooling on the sheets, no slow dripping that eventually rusts everything and causes leaks. Your roofing sheets last longer, and you don’t keep calling the carpenter every rainy season. Plus, that extra height gives you natural ventilation; hot air escapes at the top, fresh air moves through. It’s simple physics doing the cooling work instead of you sweating and running expensive fans or AC all the time. So next time you see those towering wooden frames, just know: it’s the smart man’s way of fighting our climate without fighting your pocket every year. The engineer isn’t wasting wood; he’s building sense into the house. I hope this helps. You're welcome 😊 Above all, love God.
