I know most of you all know of this already, but Im just catching up :-) If there are other historical figures like Ancel Keys that I should look up and study as well, please let me know. Ancel Keys was a physiologist best known for his role in shaping modern dietary guidelines, particularly regarding fat and heart disease. His most influential work was the Seven Countries Study (1958-1970), which linked saturated fat consumption to higher rates of heart disease. This research heavily influenced government policies, leading to decades of low-fat dietary recommendations and increased consumption of carbohydrates.
