Why bother doing it the hard way when backing in is so much easier and has better visibility? Then leaving is also easier... I suppose pulling in forward is performative and demonstrates one's risk tolerance and stress resilience as well as wealth since you are less conservative with financial risk.

The argument often falls to incentivizing outstanding service, and pivoting to a commission based model where prices go up 20% and then the wait staff earns a 20% commission seems fine to me.
If there is some desire to reduce taxes, how about letting everyone keep more of their money vs deciding some specific jobs get effectively subsidized.
