@DaveEDanna Not sure about the room temperature thing but what I am sure about is that a like HOT food. When I rest my steak it goes like warm. No thanks - I eat it straight off the fire or out of the pan - piping hot !!

I see people telling me to leave a steak out until it's room temperature before starting to cook it and let it sit after cooking before cutting it. But do I really have to wait until it's room temp? That can take 2+ hours? Am I missing something? And how long do I need to let it sit? Does it actually matter?
