@Rlarson26 @paulsaladinomd It sounds like you weren’t consuming enough calcium to bind to the oxalates in the stomach. Insufficient hydration and high salt could have been factors as well. It’s easy to blame the spinach but the issue is likely elsewhere.

@paulsaladinomd Before I found you, I was eating a ton of spinach and peanuts. Ended up with a calcium oxalate stone. Thank you for all you do. Never doing that again!

Spinach is the worst leafy green you can eat.
-Highest pesticide amounts of ALL produce by weight. 75% of non-organic samples contain permethrin (neurotoxic insecticide banned in Europe).
-High oxalates (~800mg/ cooked cup) = significant kidney stone risk
-Accumulates cadmium/lead
Lettuce (romaine etc.) is far less problematic. Bring on the pitchforks🍴, @X.

Vegetables are not superfoods. They are the dietary equivalent of a participation trophy: present at every meal, given enormous credit, and quietly underdelivering on almost every metric that matters.
The nutrients people cite: iron, calcium, magnesium, are bound inside plant cells in forms that your gut absorbs at a fraction of the rate you'd get from meat. Spinach iron. Kale calcium. Beautiful numbers on paper. Functionally approximate to eating the paper.
Then there are the pesticides. UK vegetables are sprayed an average of seventeen times before they reach your plate. Not once. Seventeen. The organic option costs three times the price and gives you instead a different set of compounds the plant produced to deter the insects eating it. The plant does not want to be eaten. It has opinions about this, expressed chemically.
Oxalates. Lectins. Phytates. Glucosinolates. These are not obscure biochemistry: they are the reason some people's joint pain, bloating, brain fog, and skin issues disappear when they stop eating the foods everyone told them were healing them.
Here's what actually works: put the vegetable through a cow. Let a ruminant with four stomachs and 50 million years of evolutionary adaptation handle the antinutrients, detoxify the lectins, concentrate the minerals into bioavailable form, and hand you back something your cells actually recognise.
The cow did the work. The vegetables were the raw material.
Eat accordingly.

@SBakerMD I am convinced many of these so called “carnivores” don’t eat vegetables because they are upset their mommy made them eat it as a kid and now they’re all grow’d up and no one can tell them what to do anymore!
