Which would you rather be able to do? People do give a f about shredding tho, for the same reason they do when watching something like this guy did. I.e. It works as a spectacle and gets views at the very least, sometimes millions, just like this guy. But playing guitar is of course not all about shedding, cool though it might be at times. If you're a good pro-level guitarist, that's a skill for life and will generate income + cool for life, especially if you lever YT or SM. I'm comparing apples to apples with this guy, so a streamer/channel of a good guitar player who knows how to lever SM to make their skill work. Seems fair to me.
