The BEST brownies..
Ingredients10 tablespoons (140g) salted butter, melted (or unsalted + extra pinch of salt)
1 cup (200g) granulated sugar
2 large eggs (room temperature preferred)
2 teaspoons vanilla extract
½ cup (90g) chocolate chips, melted (semi-sweet for deeper flavor, or milk for sweeter)
¾ cup (94g) all-purpose flour
¼ cup (21g) unsweetened cocoa powder (Dutch-processed for richer taste if possible; regular works)
½ teaspoon salt
1 cup (180g) chocolate chips (whole, for melty pockets; semi-sweet or mix-ins like nuts optional)
Instructions:
1. Preheat oven to 350°F (175°C). Line a 9x9-inch metal baking pan with parchment paper (leave overhang for easy removal) or lightly grease.
2. In a large bowl, whisk the melted butter and sugar together until smooth (about 30 seconds).
3.Add the eggs and vanilla. Whisk vigorously for about 1 full minute—this incorporates air for the crackly top (mixture should lighten slightly and look ribbony/frothy).
4. Melt the ½ cup chocolate chips (microwave in 30-second bursts, stirring). Whisk into the batter until smooth.
5. Switch to a rubber spatula. Gently stir in the flour, cocoa powder, and salt until just combined (avoid overmixing). Fold in the whole chocolate chips.
6. Pour into the prepared pan and smooth the top evenly.
7. Bake for 30 minutes (center should still have a slight jiggle for fudginess; edges set). Cool in the pan for at least 30 minutes before slicing texture improves as they settle.
