Something cool about smell is that we can create entirely new scents that no one has experienced yet, but we can’t do that for other senses. You can’t imagine a new colour, for example. Any song you’ll ever hear is a combination of notes you’ve heard before.

I feel very alone in the anecdote sea with my N=1: I’ve never noticed anything one way or another from seed oils (avoided completely for eight years; still do not cook with them but definitely get exposure when eating out, condiments, etc.). But even a tiny amount of butter, coconut oil, palm oil, or tallow causes an immediate inflammatory reaction and a week of acne breakouts.

People are EXTREMELY susceptible to psychosomatic effects from things they believe are bad for them, when in reality it’s often the belief itself that produces the symptoms. This accounts for an astonishing amount of perceived food intolerance. If you ran a year-long blinded experiment in which months were randomized so the person unknowingly received either “seed oils” or animal fats, and you measured their perceived joint pain each day, I can almost guarantee you wouldn’t find any correlation.

Huge shout to my friend from an undergraduate philosophy program who started working out every single day, not for health benefits or to become conventionally attractive or whatever, but because -- and this is a direct quote -- he was concerned that otherwise he might "become lost in the world of signs and forget the things they signify". I have thought about this every single time that I've worked out since.
