Mamaw's Homemade Bread🍞 Yield:2 loaves Ingredients: - 3 cups lukewarm water - 2 tablespoons sugar or honey - 2 teaspoons salt - 2 teaspoons active dry yeast (or instant yeast) - 3 tablespoons olive oil - 6–8 cups all-purpose flour (plus more as needed) Directions: 1. In a large mixing bowl, combine the lukewarm water, sugar (or honey), and salt. Stir until dissolved. 2. Sprinkle the yeast evenly over the surface of the water mixture. Let it sit for 5–10 minutes until the yeast becomes foamy (if using instant yeast, this step can be skipped and you may proceed immediately). 3. Add the olive oil and stir in about 5 cups of flour until the mixture becomes too stiff to stir easily with a spoon. 4. Lightly flour a clean work surface and your hands. Turn the dough out onto the surface and begin kneading, gradually adding more flour (from the remaining 1–3 cups) as needed. 5. Knead for 8–10 minutes until the dough is smooth, elastic, and no longer sticky. To test: pinch a small piece and roll it between your fingers—if it sticks heavily, add a little more flour and knead it in; if it forms a smooth ball without sticking, you've added enough flour. 6. Shape the dough into a ball, place it back in the bowl, and lightly oil the surface of the dough (or the bowl) to prevent drying. Cover with a clean cloth or plastic wrap. 7. Let the dough rise in a warm place for about 1 hour, or until doubled in size. 8. Gently punch down the risen dough to release air. Lightly oil your hands, then turn the dough out of the bowl. 9. Divide the dough into two equal portions. Shape each portion into a smooth loaf: flatten slightly into a rectangle, fold the sides in, roll tightly into a log, and pinch the seam closed. Place each loaf seam-side down in a lightly oiled 9×5-inch loaf pan. 10. Cover the pans loosely with a clean cloth and let the loaves rise again for about 30–45 minutes, or until nearly doubled in size. 11. While the loaves are rising, preheat the oven to 375°F (190°C) with the rack in the middle position. 12. To test readiness: gently poke the corner of a loaf with your fingertip. If the indent springs back quickly, let it rise longer. If the indent remains, the loaves are ready to bake. 13. Bake for 30–35 minutes, or until the tops are golden brown and the loaves sound hollow when tapped on the bottom. (For extra browning on the bottom, you can bake the last 5 minutes directly on the oven rack after removing from the pans.) 14. Remove the loaves from the pans immediately and place them on a wire rack (or clean cloth) to cool. 15. For a soft crust, brush the warm tops lightly with butter if desired.
