A little on restaurant economics: High margin doesn’t always = high $. If you charge $10 for a bfast plate and your COGS are 20%. You have $8 left. 👍 margin. But you need to do 2.5k to break even and PPA is $12. Need to do 208 ppl daily. Will 208 ppl sit down each day?

@mattadler81 @BarredinDC Breakfast has a great margin. Most ingredients are low cost. Everyone likes eggs, toast, pancakes and waffles. The Diner in Adams Morgan is a example of this successful concept.
