We always post pictures of the stunning Beef we are lucky enough to serve to our clients on a daily basis both in our store and to our Restaurant/Chef partners. But today I thought why not show a picture of Beef that we DON’T ACCEPT and explain why. I came across this picture from a few years ago today on my phone. We always, always do our final selection when the Beef arrives to us and if I’m not there and the lads aren’t happy with something I get a pic like this one because the lads don’t wanna hear me whinge if something has been accepted in that should have been rejected. So I get the final say and then it’s my f*^k up if it’s not right. This Beef (not from one of our usual sources) was rejected for a couple of reasons and before anyone piles on, this Beef will do a job for someone else but not for me and it doesn’t meet my selection criteria which I am really strict on. This was from a Young Bull, slaughtered around 16 months old and unfortunately it wasn’t blessed with much or any intramuscular marbling. The meat was also a dark colour with a sticky texture. The result of all of this would have been tough, bland tasting meat no matter how well dry aged it was. If it doesn’t meet our criteria then it doesn’t make it in!! It’s that simple. This is my favourite part of the job and I was lucky enough to receive the training I did from my Dad that I have the ability to select the best Irish Beef and reject it when necessary. Anyway, wanted to show you the other side of our work and thought some of you might be interested. Thanks for coming to this evening’s waffle 🤗

In Berlin every marathon entrant gets free public transport for the entire marathon weekend. Busses, trains, underground. In Dublin we shut down one the main transport arteries the city has. Note that the Luas (red line) also has schedule changes on Sunday morning too.
