The reason is definitely not food.
1) Universities started to realize in the early 2000s that they could charge more and it made them more desirable/elite.
2) Pull up a random department at an SEC or ACC school and look at the number of random support staff. They will have like 10 support staff that are not professors doing some made up job for a major with 100 students.

Schools are free to have bad food and old dorms if they want, but families are free to send their kids out of state to Auburn for $63,000/year if they want a better experience.
