Fun Tip: Adding a solution of baking soda and water (about ¾ teaspoon baking soda to 2 tablespoons water per 2 pounds) and letting it soak for around 15 minutes before browning, raises the meat’s surface pH. This will help it hold more water and brown better during cooking.

Bragging about my oldest, who is almost 10. His teacher said, in his final report card this year, that he’s incredibly and unusually artistic/creative. This photo popped up in my memories. This is what he put together when he was three years old. He wandered the park collecting items (including a dead moth lol) and placed them on the sidewalk like this. He spends his time drawing, inventing his own origami pokemon (his own creations with names and backstories), crocheting weirdly shaped containers, sculpting modelling clay into faces, writing mini graphic novels, and more. He’s got such a beautiful mind and heart. ❤️

For years now government overreach - under the guise of “environmentalism “ - has systematically been destroying forestry grazing leases for cattle. This has had a very real and devastating impact on the health of our forests, but I’ve yet to see anyone currently talking about this. They’ve also made it more difficult for private landowners to mitigate fires on their land, through use of fire breaks etc. Been up close and personal with this on many occasion, but it is certainly nothing new. 2015 was a bad one in the southern interior for ranchers.

Trump and the Carney Liberals are both wrong about different aspects of the forest fire issue. No forest management can just prevent fires from breaking out in a territory as big as Canada but we also do in fact have poor management that has led to things like the Jasper fires. Also remember when Liberals used to blame all fires on the Canadian oil and gas industry? I guess we no longer do that once we are in a rhetorical fight with Trump over stupid fire tariffs he is toying with. Everyone is a hypocrite here.

Those two details are the kind of thing that turns a bad fire into a catastrophic one. A few things worth flagging: The sprinkler/hydrant failure is the real story here. A building that size in an industrial park should have a fully operational fire suppression system. The fact that it wasn't working on entry, combined with poor hydrant pressure, suggests either maintenance negligence, system design flaws, or infrastructure issues with Tracy's water grid in that zone. Fire chiefs don't casually mention that stuff to the press — it's a pointed comment. Supply chain implications are non-trivial. Medline is one of the biggest medical supply distributors in the country. A ~1-million-square-foot distribution center represents a significant node in their West Coast logistics. Depending on what was stored there — PPE, surgical supplies, gloves, gowns, etc. — this could ripple through hospital supply chains in the western states. The healthcare system already runs on just-in-time inventory; a major node going offline for months (and this building is almost certainly a total loss if the roof is collapsing) will be felt. The FedEx spread is concerning. Embers jumping to a neighboring FedEx building means this wasn't contained quickly.
