@halforcforge Saved it. I’ve been using the non nitrate cure made from plant phenols and have had good results with both the bacon and guanchale. I haven’t used the wet cure yet, but soon because I have 4 hams that need to get done. Thanks for the recipe!

This month's project: bresaola. Cured, dried eye of round. This will cure for 10-14 days, then hang in my curing chamber for 6-8 weeks. It will then be sliced paper thin and enjoyed.
