I’ve seen a lot of Japanese people trying their hand at BBQ and noticed a trend among them that I believe is sabotaging them; They seem to take a big beautiful cut of meat and then slice and dice it up into tiny pieces before cooking it. My dear friends in Japan - this is not how BBQ is done. What you want to do is take the meat and marinate it or use rub on it, then sear on high heat and then slow cook it the rest of the way to achieve tenderness. Let it rest for a bit and then cut it up AFTERWARDS - this is how you get the nice crust on the outside of the meat without overcooking the inside! You get more variation in texture and flavor on the meat this way.

As we’ve made some new Japanese friends today, I felt it appropriate to share a story from a family trip to Japan many years ago. As part of our venture we traveled to the Southern Island of Shikoku to visit the remote Iya Valley, one of the most beautiful places I’ve ever been on earth. We stayed at a small traditional hotel deep within the valley. The view was incredible. The clouds actually capped the mountaintops. However, the more important memory was not actually the location. It was our Japanese hosts. The first night that we were there, the food that was prepared for us was very traditional. Raw fish served with a hot plate that you would sear lightly. Some of us enjoyed it, others in our family were not big fans of seafood and didn’t care for it. The following night at the hotel, our hosts, without us asking, had procured specifically for us Kobe beef. Which they sliced into small cubes and served with hot oil so so we could cook it to our own temperature. It was incredible. That hospitality, shown to a family of Americans, none of which spoke Japanese, left me with a deep sense of respect for their country and their people. I hope to go back someday. Seeing the Iya Valley again alone would be worth the trip.

Dear new Japanese friends... May I beg an explanation of something of you? I'm sure the answer is different for everyone... but... WHY do you like us? Many places we have gone to war with, and even some of the ones we have gone to war to save... seem to hate us But our nations engaged in some of what is arguably the most horrific warfare in human history to that date, and it's not like you got space away from us or our culture afterwards to gain peace over it why don't you hate us like the Germans do? Or the french? or on most days, half of the British? I'm VERY happy about it, and grateful, but I have always wondered what the difference is I know much of it for us is "We had a problem, we settled it, now there's not a problem"... kind of the "2 dudes fight on the playground and end up best friends" thing
