Your cherry-picking aside, numerous contemporaneous writings refer to the region as "Palestine" (or a linguistic equivalent), including the Jewish writers Josephus and Philo of Alexandria.
Palestine referred to the larger encompassing region, while the New Testament writers used more geographically specific names.
It's like someone saying they're from Wisconsin instead of from the United States.
