Insulin sensitivity and glucose handling are most effective in the morning.
That’s one reason I’m a fan of early time-restricted eating and not a fan of eating large meals (especially carb-heavy ones) within about 3 hours of bed.
You can eat the exact same meal, with the same calories and macros, and get a very different insulin response depending on when you eat it.
One reason is melatonin. As melatonin rises in the last few hours before your natural bedtime, it’s signaling to organs, including the pancreas, that it’s time to shift into recovery mode. That means insulin secretion may be less efficient late at night.
This is how I prefer to eat, and many people find it to be beneficial.
