世界で初めて人工種苗から育てた「完全養殖ウナギ」蒲焼の試験販売が行われるとのことで、先日、鈴木農林水産大臣にお届けいただき、私も試食させていただきました。
脂のりが抜群、ふっくらととろけるような口当たりで、お箸が止まりませんでした。
通常のウナギ養殖は、河川などで採取した天然の「シラスウナギ」から行っていますが、「完全養殖」は、人工的に採取した卵から育成した成魚を産卵させ、得られた卵をもとに再び成魚を育成し、人工ふ化を行い養殖するものです。
このニホンウナギの「完全養殖」は、2010年に「水研機構」（国立研究開発法人水産研究・教育機構）が世界で初めて成功した技術です。
当初は、人工種苗（シラスウナギ）を育成するコストは１尾当たり100万円以上だったものの、長年の技術開発の結果、１尾当たり1,800円、天然シラスウナギの3～4倍程度までのコストダウンに成功しているとのことです。
更なる技術開発を通じて、天然種苗と遜色のない生産コストを実現することで、ニホンウナギ資源の持続的な利用と養鰻業の活性化につながるとともに、消費者の皆様にも喜んでいただけることを期待しています。
