Last three days have been eye-opening for me personally. We make our coffee concentrate in-house and supply it to all our cafes since we don’t have an espresso machine at our outlets. I initially decided to follow the same principle as cold brew for better shelf life and flavor stability, but I soon realised that the process was killing the coffee aroma, creating burnt notes, and degrading the coffee’s color. So we decided to use our syrup boiler to make the concentrate instead and it worked. Thanks to Reddit again for helping with the research on this one.
