It takes so long to prove this because Whitehead and Russell are constructing the entire edifice of mathematics from scratch using only basic logical axioms and a theory of types, defining concepts like propositions, classes, relations, unit sets, and cardinal numbers in exhaustive, incremental detail with hundreds of prior propositions. Most of those pages are spent rigorously establishing the foundations of logic, set theory, and the very meaning of numbers and operations so that everyday arithmetic can be derived without any unproven assumptions.

In the book Principia Mathematica (1910), it takes Whitehead and Russell about 300 pages to prove that 1 + 1 = 2.
